This is a non-dairy version of this recipe. This is the best popover recipe I have found, these popovers are very eggy in flavor, and popped perfectly.

1 cup all-purpose flour + 1/8 cup for dusting pan
1/8 teaspoon salt
3 eggs
1 cup unsweetened soy milk
2 Tbl Smart Balance margarine for greasing pan

Directions
1.In a bowl, combine flour and salt. Combine eggs and milk; whisk into dry ingredients just until blended. Using one 12-cup muffin tins, grease and flour 9 cups; fill two-thirds full with batter. Fill the empty cups two-thirds full with water. Bake at 450 degrees F for 15 minutes. Reduce heat to 350 degrees F (do not open oven door). Bake 15 minutes longer or until deep golden brown (do not underbake).
Serving Size: Makes 9 medium sized popovers.
