Banana Oatmeal Bread

Introduction

Number of Servings: 18

Ingredients

    -1/2 cup packed brown sugar
    -1/4 cup brown sugar Splenda
    -6 tbsp unsweetened applesauce
    -1 tbsp vegetable/canola oil
    -2 large egg whites
    -1 large egg
    -2 large bananas, mashed
    -1 cup oats
    -1/2 cup skim milk
    -1 tbsp baking powder
    -1 tsp baking soda
    -1/2 tsp salt
    -1/2 tsp cinnamon


Directions

PREHEAT OVEN TO 350 DEGREES
1. Combine the brown sugars, the applesauce, the oil, the egg and egg whites in a mixing bowl on medium speed.
2. Combine the bananas, the oats and the milk, and add to the sugar mixture.
3. Add flour, baking powder, baking soda, salt, and cinnamon.
4. Spoon mixture into a greased 9 x 5 loaf pan. Bake in oven for 1 hour and ten minutes, or until wooden pick comes out clean. Cool completely until serving.

Serving Size: Makes 18 medium slices
