1 cup chopped onions
1/2 cup chopped celery
1/2 cup chopped carrots
3 cloves garlic, minced
2 cups water
1 Knorr Vegetable Bouillon cube (or vegetable broth seasoning for 2 cups of water)
3 - 15 oz. cans black beans rinsed and drained
1 - 14.5 oz. can tomatoes
1 - 4 oz. can chopped green chilis
2 teaspoons cumin
2 teaspoons coriander
1 teaspoon oregano
1 teaspoon basil
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper (optional)
1 tablespoon freshly squeezed lime juice
2.In a blender combine the remaining can of rinsed drained beans, the can of tomatoes and the can of green chilis. Blend until smooth.
3.When the onion, carrots, and celery are tender, add the blended mixture. Then add all the remaining ingredients except for the lime juice. Cover and let simmer for about a half hour. Just before serving add the lime juice.
4. Makes 8 servings,1 cup each.
