Apple Cinnamon Muffins

Ingredients

    3 tablespoons melted butter or neutral oil, like grapeseed or corn, plus more for the muffin tin
    2 cups all-purpose flour
    1/4 cup sugar, or to taste
    1/2 teaspoon salt
    3 teaspoons baking powder
    1 egg
    1 cup milk, plus more if needed
    PLUS
    1 apple, medium, chopped
    1 tbsp sugar
    1 tbsp cinnamon

Directions

Followed the recipe from Mark Bittman's How to Cook Everything (http://markbittman.com/muffins-infinite-ways).

Chopped 1 apple and tossed with additional tbsp of sugar and cinnamon, then added to the batter before baking.

Serving Size: makes 12 muffins
