Introduction

Quick and easy lunch or brunch, this Frittata/Omelett is cooked in a skillet. Quick and easy lunch or brunch, this Frittata/Omelett is cooked in a skillet.
Number of Servings: 2

Ingredients

    2 large Eggs
    3 large egg whites
    1/2 large Onion chopped
    2 cups sliced Zucchini
    1 cup fresh Mushrooms, sliced
    2 cubic inch of Feta Cheese, chopped
    4 second spray of Pam - Olive Oil Spray
    1 tsp Garlic powder
    1/2 Tbsp of dry Basil

    ** Optional: 2 Tbsp Salsa (=10 calories not accounted in the recipe)

Directions

Coat the skillet with cooking spray and toss chopped onion. When translucent, add mushrooms and zucchini. Add Basil and Garlic powder. Sauté until slighty brown. Add cubed Feta Cheese and beaten whole Eggs and whites. Let cook until slightly brown on one side. Cover for 5 minutes, then uncover and fold. Serve warm.

** This recipe doesn't need added salt because the Feta cheese flavors the whole dish.



Serving Size: Makes 2 serving - 1/2 of the Frittata each.
