Sweet Corn Tomalito

Ingredients

5 Tbsp soft butter
1/4 C masa harina
1/3 C sugar
1/2 C water
2 C corn
1/2 C cornmeal
1 tsp baking powder
1/2 tsp salt
7 tsp milk (whole milk used for nutritional value)
Directions
Mix butter, masa harina, and sugar together.
In a blender, mix 1 cup of corn, water, and cornmeal. Blend.
Add remaining corn and blended mix to first mixture.
Add baking powder, salt, and milk. Stir.
Pour into an 8 x 8 glass dish. Cover with aluminum foil. Place over a large saucepan of simmering water, water level should be 1/2 - 3/4 high on the glass dish. Can cover if prefer. Steam 55 - 60 minutes. Add water when needed to saucepan if didn't cover.
Stir pudding before serving. Serve in small scoops, rounded into balls if preferred.
