Tarragon Turkey and Pasta Slow Cooker

Ingredients

    2 pounds turkey Tenderloin
    1/4 cup dry white wine
    1/2 cup thinly sliced celery
    1/4 cup thinly sliced green onions
    4 tbsp minced fresh tarragon, divided
    1 tsp salt
    1tsp black pepper
    1/2 cup plain low fat yogurt
    2 tbsp minced fresh italian parsley
    2 tbsp lemon juice
    1.5 tablespoon corn starch
    2 tbsp water
    4 servings whole grain pasta cooked to al dente

Directions

1) combine turkey, wine, celery, green onions, 2 tbsp tarragon, salt, and pepper in crockpot. Mix Thoroughly. Cover and cook on low 6-8 hours or on high 3.5 to 4 hours or until done.

2) remove cooked turkey from crockpot and cut into 1/2 inch thick medallions. Turn crockpot to HIGH. Add Yogurt, remaining tarragon, parsley, and lemon juice to the liquids.

3) combine cornstarch and water in small bowl. add to slwo cooker and cook until liquid thickens. Serve turkey over pasta drizzle with tarragon sauce.
