Avocado (Medium, whole)
Sweet Corn (1 can)
Black Beans (1 can)
Spinach (3 heaping handfuls)
Mozzarella Cheese (Sprinkle to taste)
Tomatoes (1 can, or 2 Roma Tomatoes)
Green Pepper (Medium, whole)
Green Onion (2)
White Mushrooms (1.5 cups)
Sour Cream (Optional)
2.Unpeel and gut the avocado and mash together with the tomatoes.
3.Combine Corn, Black Beans, Spinach with your Avocado mixture and fresh vegetables.
4.Refrigerate for 5-10 minutes.
5.Garnish with Mozzarella cheese and Sour Cream. (Optional)
