Vegan Apple Biscuits

Introduction

These biscuits are more like scones but are still moist and dense. With no added sugar, they are still fairly sweet but not overpoweringly so. They go great split in half with a dollop of smart balance or margarine inside! These biscuits are more like scones but are still moist and dense. Ingredients

    2.5 cups all-purpose unbleached flour
    1 tbsp baking powder
    1 tsp salt
    2 tbsp smart balance lite (non-dairy)
    2 apples, chopped and sauteed in 2 tbsp smart balance, then blended
    0.75 cup rice milk (vanilla or plain)

Directions

Preheat oven to 450 F. Combine dry ingredients and blend in melted smart balance with a fork until it breaks into fine particles. (You can melt the smart balance in the microwave for 30 sec.) Add the rice milk and apples and mix with a spoon or by hand. Coat a cutting board in flour and use a rolling pin or your hands to spread it to a half inch thickness. Using a drinking glass, cut rounds and place on an uncovered/ungreased cookie sheet. Bake uncovered at 450 F for 10-15 mins or until they JUST BARELY become golden brown at edges. Remove and eat warm!
