Buffalo Chicken Casserole - healthier

Introduction

A quick main dish. Only 386 cals, 16 g fat and 24 g carb, per serving. Hi in potassium, but also sodium.
Can also use chicken breasts cut into chunks, heat until cooked through.

Number of Servings: 3

Ingredients

    6 chicken thighs, skinless

    1 1/2 c. Prego sauce with mushrooms
    6 T. buffalo sauce, Texas Pete or Frank's (or add more if want spicier)
    3 T. dried onions
    1/2 t. garlic powder
    1 stalk celery, cut diagonally into 1" slices

    3 oz. Blue cheese, spreadable or crumbles

Directions

1. Preheat oven to 350 degrees.
2. Remove any extra fat on thighs.
3. In a saucepan on medium heat, place spaghetti sauce, buffalo sauce, onions, garlic powder and celery. Heat until almost boiling.
5. Place chicken in oven-proof dish. Pour heated sauce over it. Cover with Al foil.
6. Bake at 350 for 30 minutes or until chicken is cooked through.
7. Sprinkle blue cheese on top of chicken. Serve immediately.

Serve with salad and veggies to make a healthy meal.

Serving Size: Makes 3 servings of 2 thighs each
