Minestrone Marinara

Introduction

Number of Servings: 8

Ingredients

    1 jar marinara (store-bought or homemade)
    1 can cannellini beans, drained and rinsed
    1 can diced tomatoes
    1 cup chopped onion, chopped into bite-size pieces
    1 medium squash, chopped into bite-size pieces
    1 medium zucchini, chopped into bite-size pieces
    1 bunch asparagus, chopped into bite-size pieces
    1 cup green beans, chopped into bite-size pieces
    2 cups mushrooms, chopped into bite-size pieces
    1 clove garlic, finely diced
    1-2 T basil

Tips

This one is great served over couscous or pasta. Personally, I use gluten-free rice and flax seed spiral pasta, hence the name of the recipe! Not included in nutritional info.


Directions

1. Add tomatoes, marinara, and basil (if it is dried) to saucepot. Heat to boiling, then reduce to a simmer.

2. Add drained beans. Stir well and simmer covered for 10-15 minutes.

3. While beans and sauce are simmering, heat olive oil in a skillet. Toss in the garlic and onion, and saute for 4-5 minutes. Add in the rest of the veggies and saute for another 4-5 minutes, until veggies are cooked but still crispy, then toss them in the pot with beans and marinara.

4. Add basil (if it is fresh) and simmer for 5-10 minutes, until it is bubbling and veggies and herbs are fully mixed into the sauce.

Serving Size: Makes 8 servings of about 1/2 cup each
