Vegan Marinara Sauce

Introduction

Ingredients

    1 red onion, diced
    3 stalks celery, diced
    1 carrot, diced
    1 green bell pepper, diced
    1 zucchini, diced
    3 medium mushrooms, chopped
    1 can tomato paste, 12 oz, low or no-salt
    3 cans tap water
    1 can petite diced tomatoes, 14.5 oz, low or no-salt
    3 cloves garlic, peeled and coarsely diced
    2 tbsp dried basil
    1 tbsp dried rosemary
    2 tbsp olive oil

Directions

Wash and dice vegetables. Set each aside in a separate bowl.

Heat olive oil over medium heat in a sauce pan. Add the vegetables and saute for 5 minutes. Add garlic, basil and rosemary. Saute 3 more minutes. Mix the can of tomato paste with 3 cans hot water and add to sauce pan. Add the diced tomatoes. Simmer for 1 hour, stirring occasionally.

Serve over pasta or in eggplant or zucchini casseroles.
