Black Bean Burgers
1 (15 oz.) can of black beans, drained and rinsed
1.5 tablespoons tomato paste
1 teaspoon Worcestershire sauce
1 teaspoon ground cumin
1.5 teaspoons paprika
2 garlic cloves, minced
1 tablespoon soy sauce
1/3 cup Mexican blend cheese
1/3 cup onion, diced
1 1/4 teaspoon kosher salt
1 teaspoon black pepper
5/8 cups quick oats
1 tablespoon cornmeal
Combine all ingredients but oats and cornmeal in a food processor and blend until well combined.
Transfer bean mixture to a bowl and add oats and cornmeal, mix well.
Shape into 3-4 patties and place on lightly greased baking sheet.
Bake for 8-10 minutes per side.
Serving Size: makes 3- 4 burgers
