Cheese & Mushroom Omelette

Introduction

Makes a good breakfast. Could also be served with a salad for lunch. Makes a good breakfast. Could also be served with a salad for lunch.
Number of Servings: 1

Ingredients

    1 tsp Olive Oil
    2 Eggs, large
    1 cup Sliced Mushrooms
    1/4 cup Grated Tasty Cheddar Cheese
    1 tsp Trim Milk
    Dash Salt
    Dash Black Pepper

Directions

1. Grate the cheese before you measure it. Slice the mushrooms before you measure them too.

2. Put small frying pan on to the heat. Medium heat. Add half of the olive oil to the pan, then add the mushrooms to cook.

3. Crack eggs into a jug, add dash of salt & pepper and the milk. Beat the eggs.
Remove the cooked mushrooms to a plate.

4. Add the rest of the olive oil to the pan and swirl it around to coat the pan.

5. Add the beaten eggs to the pan swirl around to coat the pan, back on the heat to cook till there is just a little runny egg in the pan and put the mushrooms back in the pan down the middle of the omelette.

6. Add cheese on top of mushrooms, fold over one side of the omelette and the second side to enclose cheese and mushrooms. The heat of the mushrooms should melt the cheese. Remove from the pan to a heated plate.

Serve and enjoy.
