Black Beans with Chipotle Vinaigrette

Introduction

This dish is a great way to use black beans. Serve by itself on on tortilla or with brown rice. The recipe calls for 9 servings but based on 1/2 cup of black beans as a serving but adjust according to your diet preferences. It is pretty saucy. Number of Servings: 9

Ingredients

    1/3 C olive oil
    2 cloves garlic
    1/2 cup balsamic vinegar
    2 red peppers (roasted in oven and seeded)
    3-4 canned chipotle peppers in adobo sauce with sauce

    whirr the above ingredients in Ninja or blender

    add to

    3 cups of black beans without "bean gravy"
    1 cup of chopped cilantro
    any other vegetables you would like to add (green onions?)

    Top with a sprinkling of queso fresco, farmer cheese or other cheese - recipe uses fresco.

See ingredient list for steps. Don't let cooking time dissuade you - I did mine in steps. Easy to pack and take along! Put on a bed of greens or use the sauce with fish or as a dip. This sauce is also something you can make hotter or milder and use for a variety of purposes (add a bit to hummus?).
