Pumpkin Turkey Chili - Slow Cooker

Ingredients

    1 Tbsp. vegetable oil
    1 cup chopped onion
    1/2 cup chopped green pepper
    1/2 cup chopped yellow pepper
    1 clove garlic, minced
    1 lb ground turkey 93% lean
    1 can (14.5 oz) diced tomatoes, no salt added
    2 cups pumpkin puree, no salt added
    1 can (14.5 oz) dark red kidney beans
    1/2 can light beer
    1 1/2 Tbsp. chili powder
    1/2 tsp. ground black peper
    1 dash salt



Directions

Heat oil in a large skillet over medium heat. Saute onion, peppers, and garlic until soft. Add turkey and cook until browned. Pour mixture in a crock pot. Add in pumpkin, beans, beer, and seasonings. Cover and cook on low for 4 -5 hours.

Optional: top with cheddar cheese and/or sour cream.
