KDJ Banana Bread

Introduction

A treat -- not an every day bread! A treat -- not an every day bread!
Number of Servings: 16

Ingredients

    - 3 bananas, ripe, mashed
    - 1 cup sugar
    - 2 eggs, large
    - 1/2 cup vegetable oil (or shortening) - I've only used oil
    - 2 cups all purpose flour
    - 1/2 teaspoon baking powder
    - 1 teaspoon baking soda
    - 1/2 teaspoon salt
    - 1 teaspoon vanilla

    * you can add 1/2 cup nuts if you want, but you would need to add the calories into the recipe

Directions

- Preheat oven to 350F. Grease a 9"x5" loaf pan
- In a large bowl, combine sugar, oil, eggs, and vanilla. Beat in mashed bananas
- Combine all dry ingredients and add to wet mixture (batter will be thick)
- Pour into prepared pan and bake for 60 minutes or until done. Insert a toothpick in center - if it is clean when removed, the bread is done
- Remove from pan and cool

Serving Size: makes 1 loaf of approximately 16 thin slices
