WFPB Frugal meal 1

Introduction

Vegetable broth veggie stew Vegetable broth veggie stew
Number of Servings: 3

Ingredients

    1 small potato
    1 small rutabaga
    1 small yam
    a handful of green beans
    a handful of mushrooms
    2 cups vegetable broth
    enough water to cover all the veggies
    (can use more broth instead of the water)

Directions

Cube all vegetables except the green beans.
Pour soup into a pot, add all the vegetables, add enough water to cover all the veggies.
Boil until vegetables are soft (40 minutes on high in clear glass dish in the microwave).

  • This sounds like such a simple dish. I want to play with it a little though. Like using 2 potatoes instead of using a yam, using fresh chicken breast, whole wheat pasta and homemade (or at least reduced sodium/fat) chicken broth. Sounds good to me. Not quite as economical, but easy and healthy. - 5/3/08
