Christmas Breakfast Casserole

Introduction

A lower fat version of our traditional Christmas Breakfast. A lower fat version of our traditional Christmas Breakfast.

Ingredients

    1 pound frozen Shredded Potatoes, thawed
    4 oz Turkey Sausage, cooked & crumbled
    1 cup sliced mushrooms
    1/2 cup shredded Cheddar Cheese
    1 cup Egg Beaters Egg Substitute
    1/8 tsp Salt, or to taste
    1/8 tsp Black Pepper, or to taste
    1/8 cup red pepper, finely chopped
    2 Tbsp onions, finely chopped

Directions

Preheat oven to 350 degrees F. Coat a casserole dish with cooking spray. Spread potatoes around bottom and press up the sides. Place in oven and cook for 10 minutes.

Meanwhile, mix egg substitute, salt, and pepper together.

Remove potatoes from oven and press potatoes down firmly with a spoon so they are spread out and cover the bottom and sides of the pan. Sprinkle the sausage, red pepper, and cheese in the bottom of the pan. Pour the egg mixture over it.

Return pan to oven and cook until potatoes are crisp and golden and the egg mixture is set, about 25 to 30 minutes. Remove from oven and let sit about 5 minutes before serving.

You can further reduce the fat & calories by using low-fat cheddar cheese. If I did that my Dad wouldn't eat it.

    Taste just as good as the high fat version I used to make. From now on, this is my go to breakfast! I used the southwest seasoned hash browns because they already had peppers and onions in them. I omitted the salt and pepper because of the seasoned potatoes. I was impressed. - 3/7/08

    Easy to make and easy to eat up! I used broccoli instead of peppers because my mom can't eat the peppers.Still came out great. - 12/22/08

    I substituted Gimme Lean Breakfast "Sausage"- a vegetarian alternative for the sausage. I also used lowfat (2%) cheddar cheese. I would make this again. I served it for dinner, but then again, I often like "breakfast for dinner." - 1/25/08

    This was very good. I also used turkey kielbasa instead, and I added some fresh ground red pepper flakes. I saute the veggies in a nonstick skillet and added garlic powder first. then I divided the cheddar into thirds and layered it in between the kielbasa mixture and egg. Delish! - 1/22/08

    Substituted crumbled bacon instead of sausage and sprinkled little bit of garlic salt when served. Picky kids loved it and I actually got some veggies in them! - 3/31/13

    This was really interesting and filling. Unfortunately I used Southwest Hash Browns and they were RIDICULOUSLY spicy-- I am a fan of spicy food but they were too hot for me. Next time I'll use plain hash browns! - 10/26/09

    This was pretty good. I forgot to add the mushrooms but it was even good without them. I added green pepper to this and used light cheese as well. I also topped it after serving with a tbsp of ketchup for extra flavor. I would make this again, next time with the mushrooms. :) - 1/17/09

    This was a good dish...but not "wonderful". Maybe I'm just not used to this "healthy" cooking yet. It was good but I prefer the one I make with french bread...it's more egg'y than potato'y. - 5/28/08

    This was great.. I changed a couple of things though.. I used fat free cheddar cheese and added spinich for extra vitamins and a smidge of hot sauce!! AWESOME - 1/15/08

  • Love that this is so easy to make. I used Teader Joe's frozen hash browns, chicken sausage and pre-cut diced onions and muchrooms for this recipe. I didn't have to chop or slice anything. I did use 2 cups of egg whites instead of egg substitue, still very tasty. - 9/21/13

  • Awesome! I accidentally put ground red pepper in it but it still tasted great! I also don't eat mushrooms or onions, so I put in a little onion powder for taste and used 1 green pepper (will likely use 2 next time). Also used a little more egg and a little less hashbrown for nutrition reasons. YUM! - 1/12/13

  • Definitely will make again. I cut the amount of potatos in half since I prefer it to be more egg-y and less potato-y. I also did not add the salt - that was a mistake as it needed some salt once I was eating it. Added more green peppers & onions than the recipe calls for. Overall - a great recipe! - 10/17/11

  • I made this lastnight. I think it is a very tastey dish. Didn't feel like I was eating food on a diet. I used the Southwestern Egg beaters instead of plain eggbeaters. I also added salsa on my plate. - 3/28/11

  • I made this recipe this morning, it tastes good but the directions are pretty bad, it never tells you to put in the onions or cheese, etc, and in general I found it hard to follow how to make it. This problem could be avoided by reading the whole thing before you start lol - 12/23/10
