Chicken Casserole

Introduction

Great with leftover chicken; sauce can easily be made with cream of chicken or cream of potato if you don't have/like cream of mushroom. Use brown rice or spelt noodles for more fiber. Ingredients

    1 can Campbell's 98% Fat Free Cream of Mushroom Soup (condensed, 10.5 oz)
    1 empty Campbell's soup can of low-sodium chicken broth
    Salt-free garlic herb seasoning to taste
    2 tbsp soy flour (or white flour or 1 tbsp cornstarch)
    4 cups (dry) egg noodles
    1 lb. cooked chicken, diced
    1/2 minced yellow onion
    1/4 cup shredded sharp cheddar cheese
    1/4 cup grated parmesan cheese

Directions

Layer dry noodles, onion and chicken in 9 x 9 baking dish.
Whisk soup, broth and herbs in small bowl and pour over ingredients in baking dish.
Bake in 400-degree oven until noodles are soft and sauce is bubbly.
At the last minute, sprinkle both cheeses over the top and let melt in the oven before serving.
Let cool for 10 minutes before serving so sauce thickens.
