1/2 cup coconut flour
1/4 tsp salt
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp xanthan gum
6 tbsp xylitol or 4 packets sweetleaf stevia
1/2 tsp cinnamon
1/4 tsp ginger
1/3 cup coconut oil or butter, melted
1/2 cup pumpkin puree
1/2 tsp vanilla
Preheat oven to 350*. Grease a 12 cup muffin tin or donut pan.
In a small bowl, whisk together dry ingredients. Set aside.
In mixer, blend eggs and butter until smooth. Add in pumpkin and vanilla and mix well. Blend in coconut flour mixture until just blended.
Scoop about 1/8 cup into each muffin cup, or fill donut pan 2/3 way full. Bake for 20-25 minutes (donuts will take 4-5 minutes less than muffins), until dough springs back when gently pressed.
Serving Size: makes 12 muffins/donuts
