Chicken White Bean Chili

Introduction

my father-in-law's recipe, you can significantly reduce sodium if you use home cooked beans and 2 chicken breasts (you can boil them and use the broth from that for the recipe). Number of Servings: 10

Ingredients

    1 T Olive oil
    3 cans Great Northern Beans (white)
    1 can fat-free chicken broth
    2 cans chicken
    1/2 cup chopped onion
    1/2 cup chopped bell pepper
    5 seeded, chopped jalapenos
    2 t minced garlic
    2 T cumin powder
    2 t ground sage
    1 t black pepper

Directions

chop onions, garlic, bell peppers and jalapenos. Heat cooking pot with the olive oil in it. sautee the onions, garlic, bell pepper and jalapenos until the onion is a dark yellow. Add in all other ingredients and bring to boil. let cook for 10-20 minutes (depending on how thick/thin you want it to be) while mixing. A thick one makes about 10 cups, a thinner chili might give you more. You can enjoy this with a dollop of light sour cream and whole corn bread :)
