Black Bean and Rotel Dip

Introduction

I whipped this up to go with some quesadillas one night, and it was delicious! I am sure it would be equally yummy on chips or spread inside a tortilla. AND, it only took a few minutes to put together! I whipped this up to go with some quesadillas one night, and it was delicious! I am sure it would be equally yummy on chips or spread inside a tortilla. AND, it only took a few minutes to put together!
Number of Servings: 8

Ingredients

    1 Can Black Beans, drained and rinsed.
    1 Can Rotel, drained
    2 Cloves of Garlic, chopped
    1/4 Cup Shredded Cheddar Cheese
    Salt, Pepper, and Ground Cumin to taste.

Directions

Combine ingredients in a food processor. Pulse until the dip reaches the desired consistency (either chunky or smooth). You may heat this in the microwave to melt the cheese into the dip if you wish, or leave it room temperature with shreds of cheese running throughout.

Serving Size: Makes 8 servings (1/4 Cup each)
