Butternut Squash and Apple Soup, amended

Introduction

Number of Servings: 12

Ingredients

    1 Tbsp olive oil
    2 med onions chopped ( 2 cups or 304 grams)
    6 1/2 cups chicken broth ( 2 cans Swanson's chicken broth,
    2 cans Swanson's 33% reduced salt chicken broth)
    1 butternut squash pared, seeded, chopped into 1" pieces
    2.6 pound squash, 6 cups chopped, 996 grams)
    4 gala apples, cored, seeded, chopped (not peeled, 653 g)
    1/4 tsp freshly grated Nutmeg
    1 tsp curry seasoning

Directions

Saute chopped onions. Add chicken broth when tender. Add Butternut squash. Bring to a boil, turn down to simmer until squash is tender. Add the chopped apples. Simmer until tender. Add the nutmeg and curry. Simmer 10 minutes. Add salt and pepper to taste if wished.

Serving Size: makes 12 servings
