Sliced fish in wine sauce

Ingredients

    10 oz. fresh fish meat
    1 egg white (to marinate fish)
    1 tablespoon cornstarch (to marinate fish)
    1/4 teaspoon salt (to marinate fish)
    Spray oil
    3/4 cup chicken broth
    1 tablespoon chopped garlic
    1/2 tablespoon chopped ginger
    1/2 teaspoon salt
    1 tablespoon rice wine vinegar
    2 tablespoons sherry
    2 teaspoon cornstarch

Directions

Slice fish fillet into 1-inch strips. Marinate with 1 egg white, 1 Tbsp corn starch, and 1/4 tsp salt. Set aside for 5 mins.

Prepare broiler. Lightly spray cookie sheet with oil. Place fish in 1 layer on cookie sheet. Broil on low for 4 minutes. It should not brown. It should just lightly cook through.

In a large skillet, bring chicken broth to boil. Add garlic, ginger, salt. Dissolve cornstarch with rice wine vinegar and sherry. Add to skillet. Bring to boil, gently stirring as sauce thickens. Add fish. Serve.
