Lentil and corn fritters

Introduction

From April 2011 NZ Healthy Food Guide. Vegan.

Recommended to serve with a salsa of diced avocado, tomato, spring onions (aka scallions), lemon juice and sweet chilli sauce. Or you could use guacamole with diced tomato.

Good with steamed cous cous, quinoa or polenta for a grain, and green salad, or grilled mushrooms and asaparagus and wilted spinach.

They also freeze reasonably well, and can be served hot for dinner or brunch, or cold in your lunch box.

Ingredients

    1 (400g) can of brown lentils, drained (drained weight 240g)
    1 (400g) can of creamed corn
    1 cup self-raising flour
    2 small spring onions (aka scallions), finely sliced
    1 tablespoon sweet chilli sauce
    Oil spray (eg canola) - 2-3 second spray to coat the pan

Directions

1. Combine all ingredients in a bowl
2. Heat a heavy-based frying pan over a medium heat - spray with oil spray.
3. Fry portions of batter until bubbles appear in the top surface, then turn over and cook a further minute or two, until they look cooked enough for you (lightly browned). Repeat until all of the batter is gone, respraying pan as required.

Serving Size: 4 servings of 5 fritters of about 6cm diameter
