Ingredients

1 C Instant Oats
1 C Unsweetened Coconut Milk
1 C Whole Wheat Flour
2/3 C Splenda Brown Sugar mix
2 Eggs
1 tsp Baking Powder
1/2 tsp Baking Soda
4-6 Tbl Unsweetened Cocoa Powder
1/2 tsp Salt
1 tsp Instant Expresso Powder
1/2 C Chocolate Chips
Directions
Preheat oven to 400 degrees
Soak oats in milk for 10-15 mins
Combine the oat mixture with the applesauce and eggs
In a separate bowl, whisk the dry ingredients together
Add to wet ingredients to the dry mix until combined
Spoon the mixture into muffin pan
Bake for 20-25 minutes, or until done.
Serving Size: Makes 12 Muffins
