Introduction

This is a variation of SBMYERS awesome Low Fat Dark Chocolate Muffins recipe. I modified this recipe for tracking purposes. This is a variation of SBMYERS awesome Low Fat Dark Chocolate Muffins recipe. I modified this recipe for tracking purposes.
Number of Servings: 12

Ingredients

    1 C Instant Oats
    1 C Unsweetened Coconut Milk
    1 C Whole Wheat Flour
    2/3 C Splenda Brown Sugar mix
    2 Eggs
    1 tsp Baking Powder
    1/2 tsp Baking Soda
    4-6 Tbl Unsweetened Cocoa Powder
    1/2 tsp Salt
    1 tsp Instant Expresso Powder
    1/2 C Chocolate Chips

Directions

Preheat oven to 400 degrees
Soak oats in milk for 10-15 mins
Combine the oat mixture with the applesauce and eggs
In a separate bowl, whisk the dry ingredients together
Add to wet ingredients to the dry mix until combined
Spoon the mixture into muffin pan
Bake for 20-25 minutes, or until done.

  • Delicious! Everyone in my family enjoyed these muffins. Only 1 question ... in the directions, it mentions to mix the oat mixture with applesauce, but there is no mention of applesauce in the list of ingredients? I added 1/2 cup unsweetened applesauce and they turned out great. - 10/21/11
