Beetroot, avocado and feta salad.

Introduction

Delicious main meal salad. If you would like to reduce the fat content use less avocado and low fat feta. Delicious main meal salad. If you would like to reduce the fat content use less avocado and low fat feta.
Number of Servings: 1

Ingredients

    Salad:
    2 boiled beetroot, cut into wedges.
    1/2 cup lettuce (I used mixed baby leaves)
    1 Israeli cucumber, sliced.
    1 spring onion, sliced.
    1/2 an avocado, diced.
    1 cubic inch of feta cheese, diced. (I used full fat with mixed herbs.)

    Dressing:
    1t honey
    1t balsamic vinegar
    1tsp olive oil
    1/2t grainy honey mustard.

Directions

Dressing:
Combine honey, balsamic, olive oil and mustard in a mug and stir to combine.

Salad: Marinate beets in dressing while you complete the rest of the salad.
Place lettuce, avocado, and cucumber in a bowl.
Next add beets and the dressing.
Crumble feta over the top and sprinkle with spring onions.

Enjoy!
