3-4 medium carrots, peeled and grated
2-3 overripe bananas, mashed
1 cup applesauce
1 1/2 cup brown rice protein
1 cup buckwheat flour
1/4 cup rye flakes
1 T baking powder
OPTIONAL: add cinnamon and nutmeg to taste
It is easiest to use a handheld mixer and mash bananas and applesauce together first, but the ingredients can be mixed in any order.
2. Combine all ingredients except the rye flakes and mix until fully blended.
3. Pour batter into baking cups, and top with rye flakes.
4. Bake for 12-15 minutes. Muffins are done when tops fully expand.
Serving Size: Makes 20-25 small muffins of about 1 oz each
