Chocolate Protein Muffins

Ingredients

    Oats, 1 cup
    Baby Applesauce, 2/3 cup
    Baking Powder, 1 tsp
    Baking Soda, .5 tsp
    Hershey's Cocoa Powder, unsweetened, 5 tbsp
    Salt, .5 tsp
    *Now Xylitol Plus, 6 Tbsp
    Brown Sugar, 2/3 cup, packed
    *Whole Wheat Flour, .75 cup
    *MRM 100% All Natural Whey Protein Dutch Chocolate, 3 serving
    Milk, nonfat, 1 cup
    egg white, fresh, 4 large
    Walnuts, 1 cup, chopped


Directions

Put milk and oats in a bowl. Allow to soak for an hour in the fridge. Preheat oven to 400 and prepare muffin pan with liners or some non-stick cooking spray. Combine all dry ingredients and set aside. Combine the oat mixture with applesauce and egg whites. Add the dry mixture to the wet mixture just until blended. Add chopped walnuts. Put in the muffin pan and bake for 20-25 minutes until toothpick comes out clean.

Serving Size: Makes 24 regular sized muffins
