Number of Servings: 3

Ingredients

    Egg Whites (Papetti Foods, Quick Whites), 18 tbsp about a cup
    Spinach, fresh, 1 cup
    Zucchini, .25 cup, sliced
    Mushrooms, fresh, .50 cup, pieces or slices
    Egg, fresh, 1 large
    Parmesan Cheese, grated, 1 tbsp

Directions

Use spray oil. Then saute a garlic glove add green onions, mushrooms and zucchini saute until just soft then add spinach. Once spinach starts to soften then add eggs and cheese at the end. Yum

Serving Size: makes 1-3 servings
