Cauliflower Soup

Introduction

a hearty winter soup a hearty winter soup
Number of Servings: 6

Ingredients

    cauliflower
    leeks
    onions
    water
    potatoes
    milk
    olive oil

Directions

cube leeks, carrot, and onion
add to medium soup pot. saute over low heat for 30 minutes, do not allow to brown.

add cauliflower, potatoes, and water. simmer covered for 45 minutes, or until cauliflower and potatoes are soft when pierced with a fork.

puree veggies in food processor or blender in batches until smooth. return to soup ot and mix with any remaining liquid.

stir in milk to desired consistency.

heat gently to desired temperature.
serve hot.

(keeps for several days in fridge, but does not freeze well)

4-6 servings (6 one cup servings)
