Chunky Vegetable Quinoa Salad

Introduction

I got this recipe from Good Housekeeping's Family Vegetarian Cooking, but substituted Quinoa for Bulgur and Butternut Squash for Summer Squash..and Regular Onion for Red Onion, so yay..kind of change a lot but it was still SUPER tasty! Number of Servings: 8

Ingredients

    2 cups Quinoa(or you can substitute Bulgur)
    1/4 Cup Lemon juice
    1 Tbs Olive Oil
    1 Small Onion (white or red)
    1 Cup Cherry Tomatoes, each cut in half
    1 Medium Zuchinni, chopped
    1 Medium Butternut Squash (or you can use yellow Zuchinni or other type of Squash)
    1/2 Cup loosely packed fresh Mint Leaves, chopped
    1/2 Cup loosely packed fresh Parsley, chopped
    1/2 tsp Salt
    1/4 tsp Black Pepper

Directions

1. Cook Quinoa according to cooking instructions on package.

2. In non-stick 12-inch skillet, heat oil over medium hot until hot. Add onion and cook until softens, 5 to 6 mins. Add Zuchinni and Butternut Squash and cook for an additional 6 to 8 mins or until veggies are tender.

3. Stir veggies and Quinoa together with lemon jucie and spices. And serve, my suggestion is with a Whole Wheat Pita.

Serving Size: Makes 8 servings, makes perfect meal with whole wheat pita.
