Hearty Autumn Minestrone

Introduction

Yummy, healthy minestrone. Easy to alter. I used kale instead of swiss chard and added some orzo.
I ended up with 8 servings out of this.

Ingredients

    2 t extra virgin olive oil
    2 oz. pancetta, finely chopped
    1 med onion, chopped
    1 large carrot, chopped
    1/2 small fennel bulb, chopped
    1 T minced garlic
    2 t minced fresh thyme
    2 t minced fresh rosemary
    6 c chicken stock
    1 lb. butternut squash, peeled, seeded, and cut into chunks
    1 bay leaf
    coarse salt & pepper
    4 c chopped swiss chard leaves
    1/4 lb green beans, trimmed and cut into 1" pieces
    1 can (14.5 oz) diced tomatoes
    1 can (15 oz) cannellini beans, drained and rinsed

Directions

In a dutch oven, heat oil over medium heat. Add next 7 ingredients; cook, stirring occasionally, 10 mins. Add stock, squash, salt. and pepper; bring to a boil. Reduce heat; simmer, partially covered, 15 mins. Add chard, green beans, and tomatoes; simmer 10 mins. Puree 1/2 cup soup. Add puree and remaining beans to soup; simmer 5 mins.
