Protein packed breakfast sandwich

Submitted by: LTHORNTON79

Introduction

I have had a long-time love/hate relationship with breakfast. I love hot pockets and other convenience breakfasts, but I also want to be healthy and eat something nutritious. This is a fast breakfast (you can keep sliced tomatoes ready in the fridge, and an egg doesn't take long at all in the microwave) that satisfies and it packed with healthy nutrients. Ingredients

    1 slice multigrain flatout bread
1 large egg (cooked in the microwave ... coffee cup works the best)
    1 tomato slice (medium size)
1 slice cheddar cheese (1 ounce) ... you can go fat-free here, but the calories are calculated with regular fat cheese and regular fat cheese will help you feel fuller.

Directions

Cook the egg (I crack mine open into a coffe cup sprayed with PAM, add just a splash of water, then pop into the microwave for 45sec-1min).
Place cooked egg, slice of cheese, and slice of tomato on the flatout bread. Fold over and enjoy!

Serving Size: Makes one sandwich

Number of Servings: 1
