Introduction

Chickpea and veggie salad Chickpea and veggie salad
Number of Servings: 5

Ingredients

    2 Cans Chickpeas
    2 Plum/Roma Tomatoes
    1 Red Bell Pepper
    1 Cucumber
    5oz Black Olives
    2tbsp Extra Virgin Olive Oil
    1 tbspCider Vinegar
    Garlic, 2 tsp
    Lemons, 1 fruit without seeds
    Basil, .5 tbsp
    Oregano, ground, .5 tsp

Directions

Chop all vegetables and combine with 2 cans drained and rinsed Chickpeas.
Add all liquid ingredients, garlic, and spices.
Mix well.

Add chicken for more protein.

Serving Size: Makes 6-8 lunch sized portions.
