Introduction

Ridiculously delicious pureed vegetable soup - thick, hearty and healthy. Ridiculously delicious pureed vegetable soup - thick, hearty and healthy.
Number of Servings: 14

Ingredients

    3 cups chopped squash (1 medium butternut squash)
    1 medium sweet potato, chopped
    1 small turnip, chopped
    3 medium carrots, chopped
    2 small apples, peeled and chopped
    1 medium onion, chopped
    1 Tbsp olive oil
    6 cups vegetable broth
    1/4 cup maple syrup
    scant dash of cayenne pepper

Directions

Heat oil in large pot or dutch oven. Saute onions until translucent. Add vegetables and saute for 5-10 minutes. Add broth and bring to a boil. Simmer over medium heat until vegetables are tender - about 30 minutes. Add maple syrup and cayenne pepper. Scoop into blender in small batches and puree until smooth.

Serving Size: makes 8 1-1/2 cup bowls
