Burger & Bean Chili

Introduction

My mother's chili didn't have a recipe -- she just dumped in this & that: ground beef, onion, garlic, kidney beans, tomato juice... and mine is pretty much the same. It changes depending on my mood and what I have on hand; some chopped green pepper is good, and I often use ground turkey instead of beef. Sometimes I use more seasoning, sometimes less, depending on my canned ingredients. It may not win any chili contests, but my family likes it! I've given instructions for making it in a Dutch oven, but you can also do it in a crockpot (brown the meat first in a skillet, then transfer to the crockpot & add other ingredients). The recipe as written here was declared by my family to have the "perfect balance of seasoning, not too spicy and not too mild". Ingredients

    1 lb. 93% lean ground beef
    1 tbsp extra-virgin olive oil, divided
    1 medium onion, chopped
    2-3 cloves garlic, minced
    1 can Del Monte Petite Cut Diced tomatoes with Green Chilies
    1 can Hormel 99% FF Vegetarian Chili w/ Beans
    1 can dark red kidney beans, rinsed & drained
    1 large can (64 oz) 100% tomato juice
    1/2 tsp salt
    1 Tbsp chili powder





Tips

There is a LOT of sodium in this recipe, something that I usually avoid in my cooking. Adapt as necessary, using no-salt-added ingredients and/or omitting the 1/2 tsp salt, to suit your diet and taste.


Directions

In a Dutch oven, saute onions and garlic with about a tablespoon of oil over medium heat. Add ground beef and cook through; drain excess fat. Stir in remaining ingredients, reduce heat down to low and cover loosely with lid. Simmer for an hour or so to develop flavors and thicken, stirring occasionally.

Serving Size: Makes about 10, 1-cup servings
