Introductioneasy and nutritious and not just for breakfast!! easy and nutritious and not just for breakfast!!
2.5 cups egg substitute
1/2 cup skim milk
1 tsp cumin
1/2 tsp taco seasoning
1/2 cup onion
2 cloves of garlic, minced
1/2 cup red bell pepper, chopped
1/2 cup black beans, rinsed and drained
1/2 cup corn
1/2 cup green pepper, chopped
1/2 cup canned tomatoes with chilis, drained
1/2 cup pinto beans, rinsed and drained
1/2 cup mushrooms, chopped
1 cup chopped ham, rinsed and drained
1/2 cup mexican cheese blend
spray a nonstick 9x9 or 8x10 baking pan with cooking spray
mix ALL the ingredients except cheese in the pan.
Sprinkle the cheese over the top and bake for 1 hour
(optional) top with shredded lettuce, salsa, either non fat plain yogurt or fat free sour cream
Serving Size: Makes 4 HUGE servings!!
