500 g spaghetti squash, cubed
2 medium onions, chopped
6 tbsp extra virgin olive oil
Cook on a low heat for about 35 min until tender. Mash.
Add 1 cup of white wine, season with salt and pepper. Cook for another 5 min. Add 60 g of goat cheese.
Cook 350 g spaghetti. Add 3 tbsp of water from spaghetti cooking to the squash mixture.
Place squash mixture on top of cooked spaghetti.
Serving Size: Makes 4 servings.
