Hot Sour Soup



Introduction

Cooking time may be a little off. This is an older cookbook and they didn't provide this information. It doesn't take long at all to prepare though.

My personal notes say that it could use more tabasco but that was before I was preparing it with kids in mind.

Number of Servings: 8

Ingredients

    2 cans (13 3/4 oz. each) Fat Free chicken broth or 3 1/3 cups stock
    2 c. orange juice
    3/4 pound chicken breast, julienned
    1 c. carrots, julienned
    1 can (8 oz.) sliced water chestnuts, drained
    1 T. low sodium soy sauce
    1/4 t. salt
    3 T. red wine vinegar
    3/4 t. tabasco
    1/4 c. cornstarch
    1/3 c. water

Directions

In a large saucepan, combine broth, orange juice, chicken, carrots water chestnuts, soy sauce and salt. Bring to a boil. Reduce heat: simmer 3 minutes or until chicken is cooked. Add vinegar and tabasco. Combine cornstarch and water until smooth, add to soup. Stir constantly, bring to a boil over medium heat and boil for a minute.
