Number of Servings: 10


    3 Tbs butter
    3/4 cups brown sugar (firmly packed)
    3 servings apricots

    1/2 cup butter
    1 cup sugar
    1 egg
    1 1/2 cup flour
    1 1/2 tsp baking powder
    1 tbs vanilla extract
    1 tbs orange juice
    1/2 cup lowfat milk


*Makes 10 servings

1) Preheat oven to 375 degress
2) Melt 3 Tbs of butter in 9 inch round pan
3) Sprinkle brown sugar; arrange pineapple slices in a design on top of the brown sugar (set aside)
4) Cream butter and add in the sugar gradually until light and fluffy
5) Add egg and beat well
6) Add sifted flour and baking soda alternatly with milk until well blended
7) Add in the vanilla and the orange juice until mixed in completely
8) Pour over the apricot design
9) Bake at 375 degrees for 45 minutes or until a wooden pick inserted comes out clean
