IntroductionLightly sauteed sole with butter sauce Lightly sauteed sole with butter sauce
1/4 lb dover sole
1 C 2% milk
2 T Seasoned flour (with Lemon pepper)
2 T olive Oil
1 T fresh parsley
2 T butter
Pat dry and dredge in seasoned flour
Heat olive oil in skillet to medium heat
Saute sole in olive oil until tender, turning once. About 10 minutes or until the fish is lightly browned.
Remove sole from pan and drain oil.
Add butter to pan and stir in bits from fish. Cook until browned
Pour over sole, squeeze lemon and chop parsley over sole.
To take a little more fat from the sauce, clarify the butter before serving
