Homemade Chicken Soup

Introduction

A much easier version of my more involved chicken soup. Soup ready in 90 minutes, filled with chicken and healthy veggies. Use whatever you have on hand. A much easier version of my more involved chicken soup. Soup ready in 90 minutes, filled with chicken and healthy veggies. Use whatever you have on hand.
Number of Servings: 3

Ingredients

    chicken leg quarter, onion, ginger root, garlic clove, turnip, celery, carrot, fresh parsley and dill, spices, tofu

Directions

Fill large saucepan with 4 cups water. Add leg quarter, quartered onions, pepper, ginger piece and garlic clove. Bring to a boil, reduce to heavy simmer and let cook about 75 minutes. Skim off fat. Remove chicken and cool a few minutes. Take off meat, removing all traces of skin. Strain soup. Broth reduces to about 3 cups. Add meat (I had 3.5 oz) and remaining sliced veggies and spices. Cook another 30 minutes. Add fresh chopped herbs to pot. Add diced tofu. Simmer another 15 minutes, adjust seasonings to taste and enjoy. If desired, cool soup first and skim off remaining bits of fat that may settle on top.

Serving Size: 2 bowls soup
