Smashed Peas with Ricotta ToastsSubmitted by: ARLENE2604
10 oz. frozen peas
2 c. frozen soybeans (edamame) beans, shelled
1 T. olive oil
4 cloves garlic, sliced
1 T Lemon juice
1 - 2 tsp fresh ground black pepper
1/2 tsp kosher salt
1/4 c fresh mint, snipped
1/2 baquette, sliced and toasted
1 cup ricotta cheese, part skim milk
In small skillet heat oil, add garlic and cook until tender, 1 to 2 minutes. Stir in the pureed peas with lemon juice, pepper, salt and mint.
Slice baguette into thin slices, spread with ricotta cheese and broil for 1 - 2 minutes. Sprinkle with additional fresh ground black pepper. Serve with Smashed Peas.
Makes 10 servings. 2 pcs per serving.
