Pumpkin Trail Mix muffins

Ingredients

    1 cup wheat (or other whole grain) flour
    1 cup all-purpose flour
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp kosher salt
    3/4 tsp ground cinnamon
    3/4 tsp ground allspice
    3/4 tsp ground nutmeg
    2 eggs
    1/2 cup brown sugar
    1/2 cup vegetable oil
    3/4 cup canned pumpkin purŽe
    1/4 cup plain yogurt
    1 cup trail mix
    2-3 tbsp flax seeds
    2-3 tbsp chia seeds

Directions

In one bowl, mix dry ingredients thoroughly. In another bowl, mix wet ingredients and add to dry ingredients. Stir in trail mix and seeds and combine well. Let batter sit in the fridge for 45-60 minutes before baking. Put paper liners in a standard muffin tin (or spray with non-stick spray) then spoon batter evenly into tin, tapping on counter to settle. Bake at 400F for 25 minutes, remove to a rack to cool completely before storing.
