Ingredients

    1 3 oz. piece of sirloin steak
    1 egg
    1 cup fresh spinach
    1 tbsp chopped shallot
    half clove garlic
    pinch of fresh tarragon

Directions

Marinate steak overnight in a little olive oil and seasoning to taste. Grill or pan fry steak to your liking. Sautee shallot and garlic lightly. Add rinsed spinach, put the lid on and turn off heat. Scramble egg with tarragon.
