Chocolate-Berry Crunch Parfait

Introduction
This parfait is pleasantly tart and has a nice crunch from the wheat germ. This parfait is pleasantly tart and has a nice crunch from the wheat germ.Number of Servings: 4
Ingredients

2 cups fresh or thawed frozen dry-pack raspberries
2 tablespoons sugar or 1 packet sugar substitute (or to taste), divided
2 cups plain low-fat yogurt
2 tablespoons cocoa powder
4 teaspoons wheat germ
4 fresh mint springs, for garnish
Directions
1. Combine raspberries with 1 tablespoon sugar in a medium bowl; set aside.
2. Combine yogurt, cocoa powder, and remaining 1 tablespoon sugar in another medium bowl, whisking until smooth and creamy.
3. Divide and spoon 1/4 of the yogurt mixture into each of four 8-ounce parfait glasses. Top each with 1/4 cup raspberries, then sprinkle with 1/2 teaspoon wheat germ. Repeat with one more set of layers. Top each with remaining yogurt mixture. Refrigerate 2 to 3 hours before serving. Garnish with mint, if desired
