Submitted by: TERRESTA

Introduction

Trying to come up with something interesting based on what I had in my cupboard - I served this with an all-day marinated London Broil. Trying to come up with something interesting based on what I had in my cupboard - I served this with an all-day marinated London Broil.
Number of Servings: 6

Ingredients

French Cut Green Beans, frozen, 3 cup (remove)
    Garlic, 5 cloves (remove)
    Canned Tomatoes, 1 can (remove)
    Lentils, .25 cup (remove)
White Rice, long grain, 2 cup (remove)
*Vegetable boullion - 1 cube, 4 serving (remove)
*Extra Virgin Olive Oil, 1 tbsp (remove)
Onions, raw, 1 medium (2-1/2" dia) (remove)

Directions

Makes 6 servings, about 1.5 cups each.

Mix bouillon cubes with 4 cups of hot water till they dissolve. Put rice, lentils and bouillon/water mixture in rice cooker and start.

Meanwhile, heat olive oil in pan. Add garlic, saute for 2 minutes. Add onions, saute for 5 minutes until translucent. Add 14-oz can of diced tomatoes with juices and bring to boil. Add green beans. Cook until green beans are warmed. Remove from burner.

When rice is finished cooking, add onion/tomato/green bean mixture to rice in heat safe bowl and mix well. Enjoy!
