1 T. Butter
2 T. sherry or vermouth
2 C. chopped yellow onion
2 large butternut squash, peeled, seeded and chopped into 1 inch cubes
1 T. curry
1 t. nutmeg
2 1/4 C. vegetable broth
1 C. apple juice
2 McIntosh apples, peeled and grated
1/4 t. pepper
Add squash and remaining ingredients to the pot and simmer until very tender, about 30 minutes.
Process in a blender, food processor, or use an electric puree wand until smooth.
