Curried Squash Soup

    1 T. Butter
    2 T. sherry or vermouth
    2 C. chopped yellow onion
    2 large butternut squash, peeled, seeded and chopped into 1 inch cubes
    1 T. curry
    1 t. nutmeg
    2 1/4 C. vegetable broth
    1 C. apple juice
    2 McIntosh apples, peeled and grated
    1/4 t. pepper


In a large pot, melt butter with sherry or vermouth over low heat. Add chopped onions and cook until clear, about 20 minutes.

Add squash and remaining ingredients to the pot and simmer until very tender, about 30 minutes.

Process in a blender, food processor, or use an electric puree wand until smooth.

Serving Size: 6 generous main dish bowls
